Strawberries are the perfect garnish for Rhubarb cake
Old Fashioned Rhubarb Cake
1/2 c. butter
1 c. sugar
1 c. buttermilk (or 1tbsp lemon juice mixed with milk)
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 c. chopped rhubarb
1/4 c. sugar
1/2 tsp. cinnamon
Pre-heat oven to 350 F
Cream butter and sugar. Add egg and beat well.
Combine buttermilk and vanilla, set aside.
Combine flour, baking soda and salt.
Alternatively add milk and flour mixtures to the butter mixture. Stir in rhubarb.
Spread the batter into a greased 9x13 pan.
Sprinkle with 1/4 c. sugar and cinnamon
Bake for 35min, or till done.
