Strawberries are the perfect garnish for Rhubarb cake
Old Fashioned Rhubarb Cake 1/2 c. butter 1 c. sugar 1 egg 1 c. buttermilk (or 1tbsp lemon juice mixed with milk) 1 tsp. vanilla 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 2 c. chopped rhubarb 1/4 c. sugar 1/2 tsp. cinnamon Pre-heat oven to 350 F Cream butter and sugar. Add egg and beat well. Combine buttermilk and vanilla, set aside. Combine flour, baking soda and salt. Alternatively add milk and flour mixtures to the butter mixture. Stir in rhubarb. Spread the batter into a greased 9x13 pan. Sprinkle with 1/4 c. sugar and cinnamon Bake for 35min, or till done.

We are picking a LOT of strawberries on our farm now!! This warm weather has been perfect to make our berries super sweet and tasty!! Our Pick-Your-Own patch opens Saturday June 17! Pre-Picked strawberries and Sweet Peas are available at the barn - 1760 Balfour St. Here's a favourite at our house: strawberry sandwiches!!
Spread butter or cream cheese on your favourite toast. Slice strawberries on to and dust with a sprinkle of icing sugar. . . . mmm. . . enjoy! |
