Strawberries and Rhubarb

Strawberries are the perfect garnish for Rhubarb cake

Old Fashioned Rhubarb Cake
1/2 c. butter
1 c. sugar
1 egg
1 c. buttermilk (or 1tbsp lemon juice mixed with milk)
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 c. chopped rhubarb​​​​​​​
1/4 c. sugar
1/2 tsp. cinnamon​​​​

Pre-heat oven to 350 F
Cream butter and sugar.  Add egg and beat well.
Combine buttermilk and vanilla, set aside.
Combine flour, baking soda and salt.
Alternatively​​​​ add milk and flour mixtures to the butter mixture.  Stir in rhubarb.

Spread the batter into a greased 9x13 pan. 
Sprinkle with 1/4 c. sugar and cinnamon
Bake for 35min, or till done. ​​
